When I was pregnant with my son, I worked at office within walking distance to a Panera. I would frequent Panera quite often and get their tomato soup. Some of my other favorite copycat recipes from Panera are copycat Panera turkey chili and copycat Panera agave lemonade.

In my opinion, Panera has the best food for fall and winter. It is so nice to have a warm bowl of soup on a cool day. This copycat Panera tomato soup is creamy, warm, full of flavor and very comforting. It is great on a cold day, especially for lunch.

📋 Ingredients needed

For this tomato soup, you’ll need:

  • Butter: I recommend using unsalted butter so you can control the amount of salt going in.
  • Olive oil: You can also use another neutral cooking oil.
  • Carrots: You’ll need two carrots for this recipe.
  • Onion: You’ll need one medium yellow pr white onion.
  • Tomato paste: To thicken the soup up.
  • Heavy cream: To make the soup creamy.
  • Canned whole tomatoes: You’ll need two cans of whole tomatoes (28 ounces each). My grocery pick up order gave me two different brands of whole tomatoes – you can definitely use the same brand!
  • Vegetable or chicken broth: Use low sodium if you are sodium sensitive.
  • Garlic, dried basil, salt, and pepper: To season the soup with.

🔪 Equipment

You’ll need a food processor or an immersion blender. You’ll also need a dutch oven or a heavy cooking pot.

🥣 How to make

In a large pot or dutch oven combine butter, olive oil, garlic, carrots, and onion.

Sauté on medium heat for five minutes before adding the tomato paste, whole tomatoes, and broth.

Bring the soup to a boil and then reduce to a simmer before adding basil, salt and pepper and heavy cream.

Let the soup simmer for at least 30 minutes and then use an immersion blender or transfer the soup to a regular blender and blend until the soup is a creamy consistency.

Homemade bread, salad, or a grilled cheese all go really well with this soup. Topping this soup with some freshly grated Parmesan cheese is also a really delicious touch.
