Following the popularity of my cheese ramen noodles and spicy ramen, I am back with yet another effortless and delicious dish made with ramen noodles.
Making a bowl of ramen noodles couldn't be any easier! You can have this dish ready in less than 10 minutes. Perfect for busy weeknights or when you are short on time.
While I used ramen noodles in this recipe, you can use any type of noodles you prefer. Simply prepare the noodles, mix the peanut butter sauce, and toss them together! You have a tasty easy meal ready to enjoy.
The main highlight of this recipe is undoubtedly the peanut butter sauce. It is creamy and savory, with a perfect hint of spice from the sriracha. You can make it extra spicy by adding more sriracha or a bit of chili powder if you prefer.

Ingredients You'll Need
You don't need any uncommon ingredients to make this recipe. Chances are, you already have everything in your kitchen! Here is what you will need to make this peanut butter noodles recipe.
Ramen noodles: use any flavor or kind of ramen noodles you prefer, as we are not using the seasoning packet. Technically this recipe would work well with any noodle you like including instant ramen noodles.
Peanut butter: peanut butter is the star ingredient. Use unsweetened, creamy, natural peanut butter.
Sriracha: Use as much or as little sriracha as you like, depending on how spicy you want your peanut butter noodles to be. If you don't have sriracha, use another neutral hot sauce, sambal oelek, chili paste,chili sauce, chili powder, or crushed chili flakes.
Dark soy sauce: for its deep, salty, rich flavor.
Garlic powder and salt: you can use fresh minced garlic instead of garlic powder.
Honey - balances out the overall flavors. Use maple syrup or other sweeteners like white sugar, brown sugar, or coconut sugar for a vegan option.
Lemon juice: adds some tang to the sauce. Freshly squeezed lemon juice gives the best flavor.
Toasted sesame oil: for some extra depth of flavor. If not available, you can omit this.
Green onion: also called scallion, is used for the onion flavor.
Toasted peanuts: crushed toasted peanuts for some added crunch in every bite.
Fresh red chili (optional, for serving): added at the end for garnish.

- Cook the ramen noodles: Fill a pot with water and bring it to a boil; discard the flavor packet, add the ramen noodles, and cook until it's al dente or according to package directions. Be sure to reserve ¼ cup of noodles water before draining the noodles.
- Make the peanut butter sauce: Whisk peanut butter, sriracha, soy sauce, garlic, honey, lemon juice, toasted sesame oil, and ¼ cup warm noodles water in a large bowl until smooth.
- Taste and adjust: taste the sauce and adjust the flavor to your liking.
- Mix in the noodles with the sauce: add drained ramen noodles to the sauce, along with some chopped green onions and crushed peanuts. Toss everything together until the noodles are well coated with the sauce.
- Garnish and serve: To finish, garnish the dish with additional green onion, crushed peanuts, and chopped red chili (if desired). Serve and enjoy!

Use warm or hot cooked noodle water in the sauce: When making the peanut butter sauce, use some warm or hot cooked noodle water to help thin out the sauce and create a creamier texture. This will also help the sauce better coat the noodles.

I recommend having peanut butter noodles right after they are prepared. However, if you have any remaining, you can store them in an airtight container in the refrigerator. They will stay well for up to three days. To reheat, add a splash of water to loosen up the noodles and then warm them up in a pan on the stovetop or the microwave for a quick meal.
