My Favorite Keto Energy Fat Bombs

Coconut and lime are some of my favorite flavor combinations. They remind me of summertime and pies and beaches.

I love fat bombs when I’m on the keto diet. You see, they are so good for you because, throughout the day, you eat high-protein meals that are used as fuel instead of fat. Then, when we feed our body high-fat snacks (like these) they help your body burn fat for fuel and stay in ketosis.

What’s In My Low-Carb Energy Balls

Here’s what I used in my fat bombs. I’ll even include some notes about things you can use as substitutions.

  • Coconut flour – there really isn’t a substitute for this. It gives the fat bombs some very healthy fats
  • Stevia extract – substitute monk fruit sweetener or erythritol if you have it on hand. Any sugar-free sweetener will work
  • Sugar-free syrup – use any sugar-free syrup that can be used on top of waffles and pancakes.
  • Almond butter – swap this out for your favorite sugar-free nut butter like sunbutter or even cashew butter
  • Lime or lemon extract – either one works just as well
  • Vanilla extract – don’t skip this ingredient
  • Unsweetened shredded coconut – this gives it healthy fats and that delightful crunch.

Perfect for Snacking or Entertaining

I prefer to keep a bunch of these in my refrigerator so I can snack on them whenever I get the urge. As you can see, they are gorgeous so take them to your favorite party and share them. No one will be able to tell that they are low-carb and sugar-free!

You need to keep these fat bombs refrigerated. Can you freeze the fat bombs? Yes, you sure can! Flash freeze them on a baking sheet first. After they are completely frozen, you can store them in a zippered plastic bag.

In order to keep it fresh, I like to put it in a pouch with an ice pack. They won’t go bad if you leave them at room temperature, but if they get too hot, they could melt and screw up the texture. They taste the best when they are cold.
