Ingredients in Healthy Pho Soup
Chicken pho ingredients are a combination of fresh ingredients and pantry staples. Below in the ingredient list you may find that you have several of the ingredients.
I’ve included a topping list for the chicken pho, I like to use all the toppings… but you may find you only want to add one or two. This list is a “pick and choose” list, you can use all, or none of the pho toppings.
Chicken Pho Ingredients:
- Coriander seeds
- Clove
- Fresh ginger
- Green onions
- Garlic
- Cilantro
- Chicken broth
- Chicken breasts
- Rice noodles
- Fish sauce
Chicken Pho Toppings:
- Bean sprouts
- Basil leaves
- Cilantro
- Lime wedges
- Sliced peppersjalapeños or chili peppers
- Sliced green onions
How to Make Low Calorie Pho Recipes
This chicken pho is quick and easy! It takes just 30 minutes to make and I have even supplied you with tips on meal prepping the soup.
Tools and Equipment:
- Large Pot
- Fine Mesh Strainer
How to Make Healthy Pho Soup
- Heat a pot over medium heat, add in the coriander and clove and toast until fragrant (about 1 minute).
- Add the ginger, green onions and garlic clove and cook until fragrant (about 1 minute).
- Add in the cilantro stems, chicken broth, water and chicken breasts. Bring to a boil over high heat, then reduce heat to a simmer (about 10 minutes).
- When the chicken is cooked through, remove it to a plate and shred.
- Strain the broth with a find mesh strainer, and discard all the solids.
- Return the broth to the pot with the shredded chicken, rice noodles, and fish sauce.
- Cook for 8-10 minutes, until the noodles are cooked through. Then top with cilantro leaves.
- Serve with optional toppings, season with salt and pepper as needed.
Meal Prepping Tip: If you want to make extras out meal prep this soup, you can make the soup broth, and wait to add the noodles for when you reheat the soup. This will save you some time… plus the pho noodles will hold together better.

Chicken Pho:
