I have once again been neglectful on the blog. It has been another crazy month so far.

Jake’s grandmother has been very ill and passed away 2 weeks ago. We are both very saddened by this loss but also know she is in a better place. We loved her very much.

We also completed our second and final race of the year! The Christmas Town Dash 8k! It was a blast! It’s so much fun running through an amusem*nt park like a little kid! The park is gorgeous always and one of my favorite amusem*nt parks that I have gone to since I was a kid. I even got to meet a Princess Cow (race sponsored by Chickfila). Cause #princesscowsarebetterthannormalcows

We also have decked the halls in our house. The weekend of Thanksgiving we went through the shed to bring out our annual friends and Christmas tree. We even decided to take a few Christmas pictures to send for our Christmas cards this year! SO CUTE. I love Jake and that he puts up with my shenanigans. Max too. 😉

I have also accumulated a lot of recipes on my camera that I just simply haven’t had time to share! GAH! With it becoming the colder months, I dream about soups. Literally. Like I was dreaming about Minestrone soup the other night.

Now back to this soup. This soup is a simple meat and potatoes soup with a Whole30 spin. Total awesomeness. I used coconut milk instead of real dairy to give it a creamy texture and sautéed some chicken apple sausage for the protein. The result? A savory creamy soup with a hint of sweetness from the sausage. I could eat this every week!

After this soup being such a big hit during my past Whole30 Recipes page takeovers, I decided to re shoot this recipe! And every time I make this soup, I still can't believe how easy and DELICIOUS it is!

Ingredients

Scale

  • 1 ½ cups of chicken stock
  • 1 ½ cup of coconut milk (preferably from can)
  • 1 tsp salt
  • 1 tsp pepper
  • Pinch of crushed red pepper flakes
  • 1 cup of diced red potatoes, peeled
  • 1 package of Bilinski’s Chicken Sausage, sliced
  • 1 yellow onion, diced
  • 2 cloves of garlic, minced
  • 2-3 handfuls of chopped kale

Instructions

  1. Fill a large sauce pan with enough water to cover an inch above the potatoes.
  2. Boil potatoes for approximately 6-7 minutes. You should be able to poke with fork fairly easily but it shouldn’t be cooked through yet.
  3. Drain potatoes and place back in sauce pan.
  4. In a skillet, brown sausage then set aside (5 minutes).
  5. In same skillet on medium heat, add onion and sauté until softened (7 minutes).
  6. Add garlic and sauté for additional 30 seconds.
  7. Add onion, garlic, and sausage to sauce pan with potatoes.
  8. Pour in coconut milk and chicken stock and stir.
  9. Turn on heat to medium low and bring to a simmer.
  10. Add spices and turn heat to low with pan partially covered with lid.
  11. Let simmer for 20 more minutes while stirring occasionally.
  12. Add kale to soup 10 minutes prior to serving
  13. Serve immediately and enjoy!

Notes

INSTANT POT INSTRUCTIONS:

In SAUTE mode adjust to NORMAL.

Follow steps 4-7 (the potatoes will cook in the IP)

Seal lid

Switch to Manual mode on High for 7 minutes with natural release

Serve!

TO FREEZE:

Allow soup to cool all the way

Pour soup into freezer safe plastic bag or glass container (leaving room at the top for expansion)

Lay bag flat in freezer.

Will keep for 3 months

    This was a hit at my house.. used almond milk cause I didn't have coconut milk... a little too spicy for the kids but the husband who doesnt like soup usually... loved it!

    The picture is the recipe looks like it has kale? But it is not listed as an ingredient. Did you add kale? And if so, how much?

      I added several handfuls of chopped kale. I stirred it in 10 minutes prior to serving! 🙂

    Can you use the aidells chicken sausage they sell at Costco?

      You can use whatever chicken sausage you like! However, if you are on the Whole30 I believe that the apple flavor is the only compliant flavor of aidells.

      I find coconut milk from a can is creamier. It gives the soup a better flavor IMO. But feel free to use any compliant coconut milk you like!
