Sugar Free and Vegan Brownies

I do have a confession to make.
A few years ago I wanted so badly to become vegan. However, I quickly found out that I was not a good candidate for this lifestyle, as much as I had wanted to be, thanks to a certain obsession that I have for handbags. So, as a result, I veered toward the vegetarian. When you are vegetarian, and live a low sugar lifestyle, there is not a lot of yummy foods out there to eat. Thus, I learned how to make my own.

A vegan recipe has no animal byproducts.
No animal byproducts means that the recipe has no cow's milk or eggs in it. Milk and eggs are popular ingredients that we see in baked goods. To bake without them would mean finding a good work-around.

Sugar Free and Vegan Brownies

In a normal baked good recipe we use eggs to hold everything together, add a bit of leavening and also add some moisture. Milk is obviously added to the recipe for moisture. For the milk in this recipe you can substitute in water or a 'nut' milk such as almond milk. If you are sticking to the sugar free theme too then make sure that your alternative is sugar free or as sugar free as possible.

Finding a substitution for the eggs leaves us with a few more options to choose from.
You can use 1 cup of applesauce (or mashed avocado or banana) + 2 teaspoons of baking powder. Another option is to use 12 tablespoons of any nut butter- obviously this would be a lot, however, it would add some protein which we lose from not using eggs. A great alternative to all of this would be to use vegan eggs which you can easily find online.

There are a few more items that we will add to this recipe.

The sugar alternative that you will use will be of your choice, however, I would recommend something in a granular variety for best results. While I am on the subject, read the labels of everything that you do use in order to keep this as sugar free as possible. Think about trading out some of your added sugar alternative for the natural sugar in any added fruit as well.

Sugar free chocolate chips can easily be found online.

No added sugar cocoa powder can also be found online. You can make this low carb by subbing in low carb flour .

The recipe for Sugar Free and Vegan Brownies

What you will need to make this recipe.
I have already discussed options that you can use in lieu of the animal byproducts that normally go into a brownie recipe. You can see those in the post above.

  • Flour (AP)- 1 ½ cups. See post for low carb alternative.
  • Sugar Alternative- equivalent to 2 cups of sugar. Granular works best.
  • Unsweetened Cocoa Powder- ¾ cup.
  • Baking Powder- 1 teaspoon (I would omit this if using an egg alternative that incorporates this already).
  • Salt- ½ teaspoon.
  • Egg Alternative- see post for alternatives- equivalent to 4 eggs.
  • Milk Alternative- see post for alternatives- equivalent to 1 cup of milk.
  • Vegetable Oil or other butter alternative- Equivalent to 1 cup of oil.
  • Vanilla Extract- 1 teaspoon.
  • Sugar Free Chocolate Chips- ½ cup.

How to make Sugar Free and Vegan Brownies

  • Preheat your oven to 350 and prep your pan for nonstick. I use parchment paper or foil for easy clean up.
  • In a large mixing bowl, mix together your flour, sugar alternative, unsweetened cocoa powder, baking powder, and salt. Set this bowl aside.
  • In another bowl, whisk together the egg alternative and milk alternative. Slowly add this mixture to the large mixing bowl with the dry ingredients and mix gently (do not over-mix).
  • Now stir in the vegetable oil and vanilla extract.
  • Lastly, to the mixing bowl, fold in the chocolate chips.
  • Pour this into your prepped pan and bake for 25-30 minutes or until the top of the brownies begins to brown or look like it is hardening. A toothpick test will probably not work for this recipe as the chocolate chips that have melted may give a false result.
